New chefs want to learn knife work. We start them on rice, and most of them are surprised by how long they stay there.

Three Variables, All Unforgiving

Seasoning, temperature, and timing. Get the vinegar wrong and every piece tastes sharp. Serve it too cold and the grain goes tight. Hold it too long and it dries from the outside in.

What we hold constant

  • Vinegar mixed to the same ratio every batch, by weight
  • Rice folded, never stirred, while still hot
  • Held at body temperature, never refrigerated
  • Batches small enough to finish within the hour

Why Small Batches

It would be easier to make rice twice a day. Instead we make it through service, because a batch that sat for three hours is a batch you can taste. If the counter is quiet, we make less.

Fish gets the compliments. Rice is what people remember without knowing why.

Once someone can make the same rice twice, they get a knife.
